Mr Fred’s, located within the award-winning hotel has taken its capacity from 28 covers to 56, increasing floor space from 667 sq ft to 785 sq ft.
The hotel’s customers’ demand for British classics is one of the reasons behind the expansion according to the hotel’s bosses, with restaurant sales having quadrupled in previous years.
The expansion is the latest in a two-year investment programme into Mr Fred’s which started with a glazed extension being built in 2010.
The restaurant sits opposite the hotel’s soon to be open spa which will launch in August.
Stanley House Hotel, general manager, Philip Wharton said: “Since the extension in 2010 sales have soared. Customers have been telling us how much they want traditional classics on the menu and our fish and chips is certainly the most popular with 222 dishes being sold in June alone. We’ve even had fish and chips on the menu at weddings!
“With the high demand, it’s a logical step to expand and offer more space for our valued customers.”
